Barrel aged 11 months in French oak, 30% new barrels

VINIFICATION: ? 

The fruit was hand sorted and completely destemmed into one 4-ton stainless steel open top tank and three 1.5-ton macro bins. After a four-day cold soak, fermentation initiated and the cap was punched down twice per day until a peak fermentation temperature of 90 F, then pumped over once per day until dryness. The new wine was pressed, settled for 72 hours, and racked to barrels for eleven months.

WINEMAKER NOTES:

The nose showcases delicate red cherry, star anise, and a mineral iron character, but the palate reveals a much more muscular, taut wine recalling the 2014 and 2015 vintages. As with those hallmark vintages, the 2021 will require some patience to reveal its full potential.
